Sconset Muffins

A forever favorite (or at least since I owned Gourmet Delights in the early ’90’s), these muffins are a little more dense, a little more flavor filled, and a little more, dare I say nutritious, than your average bakery muffin. Carrots and pineapple and raisins and apples and walnuts… If you don’t like a lot of “add ins,” these are not for you, but if you do? They are the best! They freeze well, too, so you can always have them at the ready to grab and go!

Sconset Muffins

One of the most popular muffins at Gourmet Delights - these pack a punch with flavor (and dare I say, they're so loaded with goodness they are even a little healthy.)

Total Time 45 minutes
Servings: 24 muffins

Ingredients
  

  • 3 eggs
  • 1 cup sugar
  • cup vegetable oil
  • 2 tsp vanilla
  • 2 large Granny Smith apples grated
  • 1 cup grated carrot
  • 1 cup crushed pineapple drained
  • ½ cup raisins
  • ½ cup coconut flakes
  • ½ cup chopped pecans
  • 2 cups flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon

Method
 

  1. Combine first 4 ingredients in a large bowl.
  2. Add apple, carrot, pineapple, raisins, and coconut. Stir to blend.
  3. In a separate bowl, combine dry ingredients. Add to the liquid ingredients, stirring well to combine.
  4. Pour into well greased muffin tins, filling about 2/3 full.
  5. Bake at 350℉ for 25-30 minutes.
